QUAIL EGGS IN POTATO NEST WITH BOLETES


Delicious and crispy potatoes with all the flavour of wild mushrooms and quail eggs.



Ingredients:

Bolete mushrooms
Quail eggs
Potatoes
Garlic
Olive oil
Salt




Preparation:

Peel the potatoes and cut them into thin sticks using a mandoline, soak them in cold water for half an hour. Then drain and dry them very well.

Place the potatoes in a cup or recipient to shape a basket.  Fry it in hot oil until golden brown, reserve it on absorbent paper.

Cut the boletes into thin slices and reserve.

Fry the garlic  in a skillet with a little olive oil, without letting it brown. Add the boletes, season and cook until they lose the water.

At the same time fry the quail eggs in other pan.

Mounting.

Place a layer of boletes in each potato nest and finish with the eggs on the top.
